In The Cellar

The grapes are placed, whole bunches, into the press. Juice is then extracted and allowed to naturally settle in a settling tank for 24 to 48 hours at 10 degrees Celsius.

The clear juice is then racked to a fermentation vessel, 80% in stainless steel and 20% in older oak barrels, where spontaneous fermentation takes place.

After fermentation the wine is left on its lees for about six months, before the wine is naturally stabilised for bottling.

Tasting

The style of this Blanc de Noir is clean and refreshing and perfect for summertime enjoyment.

Ample fruit, with citrus bursting to the foreground in the form of fresh grapefruit. The mineral lingers on the palate, giving it a beautifully long and dry finish.

Raats Family Wines was one of the driving forces behind the establishment of Polkadraai Hills as an official ward within Stellenbosch in 2007.  With its unique decomposed dolomite granite soils, proximity to the ocean and south facing slopes it allows for great depth of quality terroir, making itself known as producing some of the most exciting wines in the country.
